Gochugaru Quesadilla

"These quesadillas are simple pleasures: just cheese + tortilla. Melty cheese is perfect for taming the heat of spicy Gochugaru while allowing the chili’s fruity flavor to shine through. Onions are optional, but a little allium crunch is always a tasty bonus in my book!"
Ingredients
½ tsp oil or butter
2 corn tortillas
¼ cup shredded cheese, like mozzarella
Gochugaru chili flakes, to taste
Thinly sliced red onions (optional)
Directions
To a large cast iron or nonstick skillet over medium-low heat, add oil or butter. Add one tortilla to the skillet and use it to spread the oil around evenly. Top with cheese, gochugaru, red onions (if using) and the remaining tortilla.
Cook for 2 to 3 minutes until cheese begins to melt, then flip the quesadilla and continue to cook until cheese is fully melted and both sides are deeply golden.
Remove from skillet and let cool slightly before cutting into wedges and enjoying.
